In general, bananas are harvested before ripening and exposed to exogenous ethylene at the destination (100-150 ppm, 15-20 ºC). In this way, its transport is easier and its final state of maturity is homogenized. Consequently, it is important to avoid the concentration of moderate amounts of ethylene during transport, which may affect the final quality of the fruit.
In addition, ethylene removal during transportation has been shown to delay the development of Anthracnose, caused by Colletotrichum musae, and crown rot, caused by Lasiodiplodia theobromae, among other fungi. Both diseases appear when bananas mature.
