In stored apples and pears , alterations may appear in the form of superficial browning attributed to the stress caused by low temperatures.
Among these alterations, the most common is superficial scalding, a superficial necrosis of the skin that affects the first five or six epidermal layers and that generally develops after months of cold storage.
