Urschel is set to introduce the Little Gem Aspire Dicer, a new cutting concept for fruit and vegetable processing, at a series of international trade shows beginning in May 2026.

The new machine will be presented at several key industry events, including Interpack Processing & Packaging in Düsseldorf, Germany (May 7–13); the National Restaurant Association Show in Chicago, USA (May 16–19); FOOMA in Tokyo, Japan (June 2–5); and ProPak Asia in Bangkok, Thailand (June 10–13).

Developed by the Urschel Innovation & Development (I&D) team, the Little Gem Aspire Dicer incorporates patented Urschel technology to achieve precision cutting. The equipment has been engineered through extensive research and development, with collaboration between Urschel’s engineering and manufacturing teams and customers worldwide.

The machine features a compact design intended to fit into limited production spaces. It is capable of producing a range of cuts, including slices from 2 mm to 10 mm, as well as strips and dices of up to 20 mm.

The new dicer takes its name from the original Little Gem, a patented invention developed by William E. Urschel in the early 1900s. The original machine was designed to remove stems and blossoms from gooseberries and was capable of performing the work of up to 100 workers in a single day, significantly impacting canning operations at the time.

According to the company, the original Little Gem marked one of Urschel’s earliest successes and laid the foundation for continued innovation in food cutting technology. The new Little Gem Aspire, currently patent pending, aims to build on this legacy for today’s food processing industry.

Urschel will release additional information about the machine on its website as the trade shows approach, where the equipment will also be available for in-person demonstration.
