Urschel Reveals a New Cutting Concept

Urschel will continue to introduce the Little Gem Aspire™ Dicer, a new cutting concept for fruit and vegetable processing, at upcoming trade shows around the world.

The new Little Gem will be revealed at select trade shows throughout the remainder of 2026, including Tecno Fidta in Buenos Aires, Argentina, from September 15–18; Anuga FoodTec India in Mumbai, India, from September 29–October 1; Alimentaria FoodTech in Barcelona, Spain, from October 6–9; and the Global Produce & Floral Show in Orlando, Florida, from October 15–17.

Invented by Urschel’s I&D (Innovation & Development) team and engineered through extensive research and development, the Little Gem incorporates patented StatiCut™ technology with precision cutting knives to increase product yield while reducing overall operating costs.

A compact design inspired by more than a century of innovation

Urschel’s I&D team, together with the company’s engineering and manufacturing teams, partnered with processors around the world to understand the specific needs of each regional market. This collaborative approach helped shape the design of the Little Gem.

The machine features a small footprint, allowing it to occupy limited production space. The Little Gem is ready to run and can produce a variety of precise cuts, including slices from 2 mm to 20 mm, strips, and dices up to 20 mm.

The new dicer takes its name from the original Little Gem, a legendary patented Urschel machine invented by company founder William E. Urschel in the early 1900s. The machine was designed to remove stems and blossoms from gooseberries, a popular fruit at the time.

From a historic milestone to a new generation of innovation

One Little Gem could perform in a single day the work of 100 workers, revolutionizing canning production. The original Little Gem was one of the company’s earliest successes and helped foster generations of innovation, ultimately contributing to Urschel’s position as a global leader in food cutting technology.

Just as the original Little Gem was ahead of its time, the new Little Gem’s patent-pending methods are designed to inspire today’s food processors.

Urschel will release more information about the Little Gem on its website, as the trade shows draw closer. Official reveals are scheduled to take place at the upcoming shows, giving customers the opportunity to view the machine in person and learn more about this new concept in produce cutting.
